Cocktails O’Clock: 5 cocktails that use Monin’s Spicy Syrup…

Monin, the coffee/cocktail syrup experts, sent me some samples way back when and using those samples I got to try some of the cocktails I’ve always wanted to try but never had the chance.

The last post based around a Monin syrup was my 6 ways to use Monin’s Falernum. It is made up with predominantly tiki style cocktails and features some of my new tiki mugs (hurrah).

This post has a slightly different feel because unlike the falernum syrup used in my last one, Monin’s Spicy Syrup is less floral and has an earthier feel to the spice. With cinnamon flavours prominent, I tried to blend this syrup into a variety of already established cocktails, simply to see if the syrup was as versatile as I hoped. Whilst some experiments inevitably fail, below you will find 5 cocktail recipes that I believe make use of this Spicy syrup in a very versatile, yet remarkably subtle way.

Although this syrup is not spicy in the traditional [hot] sense, it does have a subtle aromatic spice to it. It comes across more as an autumn/winter seasonal spicy flavour. This works perfectly for me because this syrup’s subtle flavour is easier to blend seamlessly into a flavourful cocktail recipe. I also have a low tolerance for hot spice so I’m happy I can try all these recipes personally.

Life On The Beach

Recipe:

2 measures Vodka

1 measure pineapple juice

½ measure spicy syrup

½ measure lime juice

2 pineapple chunks

Garnish: pineapple chunk and lime wedge

Method:

  • Muddle pineapple chunks with lime juice and syrup.
  • Add crushed ice, then vodka.
  • Stir well.
  • Add pineapple juice and top with ice.
  • Stir once more and garnish before serving.

Recipe:

2 measures rum

¾ measure lime juice

1 measure spicy syrup

Top up ginger ale

Garnish: mint and lime wedge.

Method:

  • Build the first 3 ingredients over ice.
  • Stir and top up with ginger ale.
  • Garnish and serve with a straw.

Gin and Bear it…

Recipe:

2 measures Gin

½ measure blackcurrant liqueur

1 measure Lemon juice

¾ measure spicy syrup

Method:

  • Combine the gin, lemon juice, and spicy syrup in a shaker with ice and shake well (for around 10 seconds).
  • Strain into a well-chilled, crushed ice-filled, rocks glass.
  • Layer the blackcurrant liqueur on top and garnish with a lemon wedge.
  • Serve with a straw.

Recipe:

1 ½ measures rye whisky

¾ measure vermouth

¾ measure pineapple (or orange juice)

½ measure spicy syrup

Method:

  • Combine over ice in a shaker and shake well for about 10 seconds (until the tin ices over).
  • Strain into a martini style glass.
  • Garnish with a pineapple wedge or orange slice (match the juice used).

Fervent Shaker Top Tip:

This cocktail works well regardless of the juice used. The only difference in flavour comes through the tropical vibe of the pineapple. Using pineapple will refresh those hot, bothersome days; whereas orange juice is perfect for those cold evenings when you need a warming elixir.

Spicy Melon Balls (serves 2)

Recipe:

1 measure spicy syrup

4 measure Midori

2 measure vodka

Top up fresh pineapple juice

Garnish: Skewered melon balls

Method:

  • Combine the Midori, vodka in a cocktail glass, over ice.
  • Top up with the pineapple juice and garnish with the skewered melon balls.

So there you have 5 cocktail recipes that, I think, make good use of Monin’s Spicy Syrup. They are not original recipes; they are tweaks of cocktails that already exist. This was done to try and showcase the versatility of such a product, especially with the unconvincing stance held by many in response to the rise in popularity of spicy cocktails.

Monin has a vast array of flavoured syrups at their disposal and as a cocktail imbiber, I am always interested in trying out new and novel syrups! My favourite simply has to be this Falernum, although their Hibiscus syrup is a truly inspirational. You can purchase Monin syrups from a wide variety of outlets but click here for more information!

Pineapple Vodka, With Extra Toppings…

The final of my 3 Vodka infusions; this sweet and tropical infusion will be perfect for those with a sweet tooth and a penchant for the tang of a fresh pineapple (like me).

It is a relatively versatile infusion that works best in tropical cocktails but also finds its place in the more ‘traditional’ recipes. Think along the lines of a Tropical Martini or Tangy Screwdriver…

Check out the infusion recipe below and then enjoy the tropical combination of your new Pineapple Vodka and a cocktail whose origin story was set in Brazil; The Very Tropical Caipiroska.

Pineapple Infused Vodka

Recipe:

1 whole (medium) pineapple, sliced/diced

70cl (700ml) Vodka

50 grams Sugar

Method:

  • Add all of the ingredients to a sterilised & tight sealing bottle.
  • Leave to sit for up to 48hrs.
  • Strain into the original vodka bottle and seal it.
  • Keep in a cool dry place away from sunlight, or in the fridge/freezer if you want it served chilled…

This infusion is extremely fresh and does not hide its tropical pineapple flavour! This vodka is a wonderful inclusion in any cocktail you want to perk up with a tropical hit. Try it in your next vodka base tropical drink or as an addition to your next Pina Colada!

Cocktail: Very Tropical Caipiroska

Recipe:

50ml Pineapple Infused Vodka

1 Lime

2 teaspoons Sugar*

Garnish: Pineapple leaf & speared fruit.

Method:

  • Add the sugar into a rocks glass.
  • Cut the lime into quarters and then squeeze and drop each piece into the glass skin up.
  • Very gently muddle the lime and sugar together until the sugar has dissolved.
  • Once the sugar has dissolved, fill the glass with crushed ice.
  • Add in your infused vodka, cover with a napkin and swizzle.
  • Top up with more crushed ice and then garnish.
  • Serve with a straw…

*the type of sugar determines the amount of muddling. Whilst using a sugar cube looks good, it also requires a lot more work. Use some granulated sugar, or better yet go for caster sugar!

This cocktail is based on the classic Caipirinha from Brazil and was huge during the last world cup [Brazil 2014]. During the 4 weeks that Fifa’s biggest tournament ran, there were more variations on the Caipirinha than one could shake a proverbial stick at. Whilst the Caipiroska was already well-liked before the WC, it did benefit a great deal from the exposure of its parent during the football tournament…

With citrus flavours galore and vast amounts of other tropical flavours a-plenty, the Caipi family of cocktails have gone from strength to strength. There are so many different varieties of this drink that it was only a matter of time before infused spirits/liqueurs made their way into the recipes!

This pineapple vodka based version is fruitier and lighter than a normal Caipiroska (the infusion process takes some of the alcohol burn away.

Fervent Shaker Top Tip: This cocktail is fantastic short and iced. But if you’re after something a little longer (and lighter) then why not make this in a tall Collins glass? You’ll have to prepare it in a rocks glass before adding it to the larger glass. You should pour the ingredients (once muddled) into a Collins glass, add the ice, then the alcohol. Before adding more crushed ice, add in some fruit juice – in this instance a splash of Pineapple & Mango would be fantastic! – Then top up with the ice.

Tequila Summer Cocktails

Do you know what the best thing about Tequila is? It’s perfect for sharing.

It’s a rustique, down to earth (literally) spirit full of flavour. Keeping this in mind I’ve gathered (what I feel are) 10 of the best summertime tequila cocktails… I won’t spoil the surprise, but the top spot belongs to my very own creation… (Yeah, Yeah I know it was a fix from the start, but there are still 9 other fantastic cocktails).

10. Santa Maria

Serves 1

45ml Reposado Tequila*

30ml White Port

15ml Velvet Falernum

15ml Simple Syrup

1 lemon – Juiced

Top up Ginger beer

Taking inspiration from the Tequila Highball, this cocktail mixes intricate flavours with sweet and spicy ingredients and tops it off with a great Reposado (or ‘gold’) Tequila.

 9. Tequila-Cranberry Cooler

Serves 4

150ml Blanco (silver) Tequila

50ml Campari

250ml cranberry juice

125ml Fresh Orange Juice

60ml Fresh Lime Juice*

Garnish:

60g caster sugar

Lime Wedge

4 x cocktail cherries (with stems)

Garnish: Wipe the lime wedge around the rims of all 4 of the glasses and then dip them in the caster sugar. Drop in a cocktail cherry just before serving.

Cocktail: Mix all the main ingredients together in a jug (over ice) and divide equally among the 4, ice-filled, glasses.

Serves 4

250ml Reposado Tequila

750ml Ruby Red Grapefruit Juice

4 tablespoons Fresh Lime Juice

Mix the ingredients in a jug, over ice, and divide equally into 4 separate glasses. Garnish with an Orange twirl…

Top Tip: Using Reposado (rested) tequila really add some fantastic flavour (and a nice little kick) to this already great drink. Add a little splash of soda water to make it a little more refreshing…

 7. Classic (Perfect) Margarita

Serves 1

Drinks as particular as this require a very well balanced combination of ingredients, and for this reason I have used the term ‘measure(s)’ so as its clear that for every measure of tequila you use the relative amounts of Lime & Cointreau…

1.5 measures Silver (Blanco) Tequila

1 measure Freshly Squeezed Lime Juice

0.5 measures Cointreau (try not to use triple sec)

Shake the ingredients over ice, until the tin is well iced. Strain the mixture into a salt rimmed, margarita glass (or small rocks glass for a slightly different look).

Top Tip: Only salt rim half the glass in salt. This way the consumer of the drink can decide on how much salt they want.

Flavoured recipes: There are literally hundreds of flavoured margarita recipes out there and I’ll be honest, most of them are awful…

Some, however, are surprisingly refreshing; like the Chilli & Cucumber Margarita.

The best thing about this recipe is that all you’re actually doing is adding some a cucumber & Chilli mix into a classic Margarita recipe (like the one above).

Here’s how you prepare one, for yourself (or friends):

1)      Chop up some chilli (or use dried chilli flakes if you’re too lazy) and mix with some diced (de-seeded & peeled) cucumber,

2)      Leave to chill for between 2-4 hours.

3)      Then just add a couple of tablespoons to your shaker before mixing up your margarita and mix away!

4)      Enjoy you’re rather different Margarita.

 

6. Classic Tequila Slammer

Serves 1

1 Part Tequila

1 Part Soda Water

Build in a glass, cover with a napkin, lightly slam on the table and then take it down in one gulp.

Top Tip: For a twist on this classic cocktail; try using flavoured sodas. Grapefruit & Orange an easy twist, but for some great tasting drinks be a little wild, try something like hibiscus soda or lychee.

 5. Tequila Sunrise

Serves 1

150ml Orange Juice*

1 teaspoon Sugar Syrup (simple syrup)

35ml Tequila

1 teaspoon Grenadine Syrup

Garnish: 1 slice of lime

Combine the orange juice, tequila and sugar syrup over ice in a glass, and then gently pour in the grenadine. Garnish with a slice (wheel) of lime.

Serves 1

Drink: 45ml Silver (Blanco) Tequila

45ml Fresh Pineapple Juice

15ml Licor 43

15ml Freshly Squeezed Lime Juice

1 teaspoon Cinnamon Syrup

Garnish: 2 tablespoons granulated sugar

1 tablespoon ground cinnamon

Lime wedge

Combine the sugar and ground cinnamon on a plate and wipe the rim of the glass with the lime wedge, then rim half of the glass with the sugar/cinnamon mixture and fill the glass with ice.

For the drink; combine all the other ingredients in a shaker and shake until the tin is iced (20-30 seconds). Strain it into the ice filled glass. Finish with a lime wheel.

3. Paloma

Serves 1

1 teaspoon fresh Lime Juice

30ml High-Quality Tequila (Silver)

Grapefruit Soda

Using a lime wedge, wipe the rim of half the glass, and dip it in coarse sea-salt. Then fill the glass with ice, adding the lime and tequila shortly after. Top up with the grapefruit soda and stir before serving. Garnish finally with a floating lime twirl/slice.

Top Tip: For an added kick, scrape out the inside of half a lime and fill it with a shot of tequila, floating this on top with a splash of salt will look stunning and supply you with an added ‘cocktail’ version of that classic tequila shot…

2. Zapatos Nuevos

Serves 2

120ml Silver (Blanco) Tequila

30ml Agave Nectar

500g (2 cups) Seedless Watermelon Cubes

30ml Freshly Squeezed Lime Juice

Garnish: 2 basil leaves

Fill two highball glasses with ice and leave to one side. Then blend all of the ingredients until smooth and pour into the ice filled glasses. To garnish, gently slap the basil leaves between your hands and wedge just inside the glass for an added herb-hit…

1. Sonoran Iced-Tea

Serves 1

25ml Kahlua Coffee Liqueur

25ml Disaronno Amaretto

12.5ml Silver Tequila

12.5ml Lime Juice

60ml Fresh Cranberry Juice

OR

60ml POM Pomegranate Juice

Combine all of the ingredients in a shaker and shake until the tin is well iced. Strain into a tall glass filled with crushed ice. Serve with 2 straws and garnish with a lime wedge and cocktail cherry.

Top Tip: For a slightly different version try substituting POM: Fresh Pomegranate Juice in for the cranberry juice, or even go half ‘n’ half (30ml of each).

Stilettos – Don’t get too excited ladies, I’m not talking about shoes!

Looking rather classy, this potent but flavoursome cocktail is a female favourite…

Recipes online generally stick to two or three base recipes and tend to vary the ratios of their ingredients. The two base recipes, again, are the same except that 1 uses Lime Juice, and the other uses Lemon juice:

 

Recipe 1:

1.5 measures Bourbon

1.5 measures Amaretto

1 measure fresh lime juice

1 lime wedge, for garnish

Recipe 2:

1 measure Amaretto

2 measures Bourbon

1 measure Lemon Juice

Lemon twist to garnish

Now usually when you have citrus and bourbon, you would opt for lemon juice (as in recipe 2), and the amaretto in such a high amount would be far too sweet. However the tartness of the lime juice helps cut through the amaretto’s sweetness and works perfectly to marry the two alcohols together…

For a longer version you can top up either recipe with Ginger beer (not ginger ale – it just doesn’t work as well).

However the version I spent my early cocktail and university life drinking was completely different:

Stiletto, My way:

1.5 measure amaretto

¾ measure crème de banane

1 measure Pineapple juice

1 measure Orange juice.

Now my version is both infinitely smoother and a tad sweeter.

Now the first recipe made for a great cocktail, a tad too strong and I did need the ginger beer, but nice none the less. The second recipe is made ‘long’ already so it should go down quite well. If you need to tweak it to your own tastes then please do so. I find that to add a little depth in flavour, adding a dry curacao (or triple sec – but not Cointreau) works wonders.
